Memorable dining in Eryri

Afon Restaurant

Named after the Welsh word for river, Afon Restaurant draws inspiration from the River Mawddach, which winds through the valley just below the hotel. With sweeping views across the gardens and towards the dramatic peaks of Eryri, it offers a refined yet grounded setting for a truly memorable dining experience.
Led by Head Chef Dan Andree, Afon is a fine-dining restaurant rooted in seasonality and a deep respect for provenance. Our menus celebrate bold, honest flavours and the very best locally sourced ingredients, crafted with care to reflect the beauty, heritage, and rhythms of this extraordinary corner of Wales. Join us for lunch or dinner to enjoy thoughtful, flavour-led cooking that tells a story of land, sea, and season.

Head Chef

Dan Andrée

Dan Andrée joined Penmaenuchaf as Head Chef in December 2024, bringing with him a passion for seasonal, ingredient-led cooking and a deep connection to the Welsh landscape.

Before taking the helm at Penmaenuchaf, Dan was Head Chef at Penmaenuchaf’s sister venue, Michelin-starred Beach House Restaurant in Oxwich, where he played a key role in maintaining the restaurant’s Michelin star while working alongside Chef Director Hywel Griffith.

His career began at The Priory in Wareham, followed by an apprenticeship at Springfield Hotel in Dorset, before honing his craft across a variety of gastro pubs and hotel kitchens. His dedication to his craft has earned him recognition as a semi-finalist in the UK National Chef of the Year 2024 and a finalist in Wales Chef of the Year 2023.

Inspired by the rugged beauty of North Wales, Dan’s approach to cooking is rooted in seasonality, sustainability, and a respect for the incredible produce available on his doorstep. Whether foraging in the hills or working closely with local farmers and fishermen, his menus are a true reflection of the land, with every dish telling a story of the region.

Restaurant Manager

Georgia Wild

Born and raised right here in Dolgellau, Welsh-speaking Georgia has always adored the beauty and tranquillity of the Welsh countryside.

Her journey in the hospitality industry began as an Assistant Restaurant Manager at Pale Hall Hotel, which sits on the east side of the Eryri National Park. Here she gained her first experience in a fine-dining restaurant in an historic hotel. She left the hotel world for a while to take a managerial position at Coesfaen Spa and Lodge in Barmouth, overseeing the day-to-day operations, while getting her first experience of a rewarding team management role. Keen to fulfil her aspiration to become a Restaurant Manager, she took on the role of Assistant Restaurant Manager at Fynnon Boutique Hotel in Dolgellau, where she gained a wealth of experience and further developed her people management skills. She then joined the Penmaenuchaf team in autumn 2022, and since joining our team, has continued to thrive. With her warm smile, can-do attitude and kind nature, she’s quickly become an integral part of our family here at Penmaenuchaf.
